Hi, I'm Roberto Giammellucca, passionate founder of the Academy.

With my background as an Italian Pizzaiolo, qualified Chef and TAFE teacher, I bring a wealth of knowledge to your sourdough journey.

I have taught over 3000 students worldwide, specialising in sourdough and health using ancient grains and organic ingredients. My unique fermentation techniques reduce gluten content more then any other method , making sourdough more accessible for those with sensitivities.

4. How long is the workshop?

The workshop is approximately 4 hours long. Our unique method ensures you get hands-on experience without spending an entire day.

5. Is this workshop suitable for gluten-sensitive individuals?

Our method reduces gluten by 40%, making it easier to digest for many gluten-sensitive individuals. However, everyone’s body is different, and we always advise caution when consuming wheat-based products. This workshop is not suitable for those with celiac disease.

7. Do I need to bring anything to the workshop?

Just bring your enthusiasm! We provide everything you need — ingredients, tools, and an apron. However, we recommend bringing a bottle of water for yourself and a notepad to take notes.

8. Can I attend if I have a food allergy?

If you have any food allergies, please let us know when booking so we can accommodate you as best as possible. Our workshops involve flour and other common ingredients.

9. What happens if I can’t attend after booking?

Tickets are non-refundable. However, you can reschedule your class up to 72 hours before the workshop at no cost. After that, a $50 rescheduling fee will apply. Please review our full terms and conditions for details.
